White Chicken Chili

For a different type of meal, try cooking up a pot of this delicious white chicken chili, spiced with peppers and topped with sour cream. The tender chunks of chicken combine perfectly with the white beans and the spices. This hearty dish is low in calories and it makes the perfect comfort food.

  • 2 cans of white beans
  • 1 tbsp of canola oil
  • 1 medium jalapeno pepper
  • 2 poblano peppers
  • 1 large onion
  • 4 garlic cloves
  • 1 tsp of ground coriander
  • kosher salt
  • 1 tbsp of ground cumin
  • 1 tsp of chili powder
  • 4 cups of chicken broth
  • 2 lines, juiced
  • 1 rotisserie chicken
  • ¼ cup of chopped cilantro leaves
  • sour cream
  • tortilla chips

White Chicken Chili

First of all, begin by draining and rinsing the white beans. Then, take a medium-sized bowl and pour half of the beans there, mashing them until they are chunky. Reserve the beans until they are needed. Into a large Dutch oven, add the canola oil and heat it over medium-high heat. Add in the onions, peppers and garlic, then saute until they are soft for about 5 minutes. Season your vegetables with salt and pepper to taste. Add the coriander, cumin and chili powder, continuing to saute for one more minute so the spices toast.

Secondly, add in the cups of chicken stock and the lime juice, bringing everything to a simmer. Add the beans and then continue to simmer for 20 more minutes. Once the cooking time it over, taste to see if it needs more seasoning. Adjust accordingly. Stir in the cilantro and simmer until it’s heated through, for about 5 more minutes.

Lastly, serve the white chicken chili while warm in individual bowls and top each of them with a dollop of sour cream and crushed tortilla chips.
