Vegan Gluten Free Breakfast

A vegan gluten free breakfast seems too hard to achieve somehow. Sometimes eggs, oatmeal, Greek yogurt and avocado toast sometimes get a little boring. From time to time, pancakes start sounding really appealing. Therefore, today we are giving you a recipe for caramel apple muffins:

  • 1 box of muffin mix
  • 1 tbsp of ground cinnamon
  • One cup of cold water
  • Some olive oil
  • 5 caramel apple chewy bars

For the glaze

  • 2 tsp of dairy-free buttery spread
  • 1 tsp of dairy free milk
  • ¼ cup of brown sugar
  • 1 cup of confectioners’ sugar, sifted
  • 1 tsp vanilla extract

Vegan Gluten Free Breakfast

First of all, to begin making the muffins, preheat your oven to 350 degrees Fahrenheit. Take a muffin pan and then line it with some baking paper. Combine your muffin mix with cinnamon in a large bowl. Whisk to combine everything, then add the water and oil. Stir well until they all combine.

Secondly, divide the mixture into your baking pan, filling all of the cups two-thirds full. Now take your apple chewy bars and place one in the middle of each cup. Bake the muffins for half an hour until they become golden brown. Let them cool off for at least 10 minutes while you prepare the glaze.

To make the glaze, combine the brown sugar, buttery spread and milk into a small pan. Bring everything to a boil and let it bubble for one minute. Remove it from the heat and then add in the confectioners’ sugar. Add in the vanilla extract and let the glaze cool.

The last step is to dip the muffins into the glaze and let them sit until the glaze becomes firm. And voila! This is how you make a perfect vegan gluten free breakfast to satisfy your sweet tooth.
