Vegan Garlic Mashed Potatoes

This recipe for vegan garlic mashed potatoes is simple and very easy to make. With fresh chives and a little vegan butter, it’s the perfect meal for the whole family. Here is how you can make this, as well as what you need for the recipe:

  • 2 pounds of Yukon gold potatoes, unpeeled
  • 4 cloves of garlic
  • 3 tbsp of extra-virgin olive oil
  • One cup of almond milk
  • 2 tbsp of minced chives
  • Kosher salt to taste

First of all, preheat the oven to 350 degrees Fahrenheit. Take the garlic and then place it on a piece of foil. Drizzle one tablespoon of the olive oil on top of it. Now wrap it in foil and roast it in the oven until it becomes tender, for about 20 minutes.

Secondly, take your potatoes and cut them into smaller cubes. Place them into a saucepan and cover them one inch over with water. Leave the pot over small heat and let it simmer. Cook the potatoes until they become tender. This will take about 20 minutes. Drain them of water and then return them to the saucepan.

Take your roasted garlic, almond milk and the remaining oil. Add them over the potatoes in the pan along with a pinch of salt. Take a potato masher and mash your potatoes. Do this until you reach your desired consistency. You can add some more milk if you want to.  Add the chives and give everything a stir.

Lastly, transfer the mashed potatoes to a serving bowl. You can garnish it with more chives if you want to. And this is how you make an amazing dish of vegan garlic mashed potatoes.

Note: try to use organic potatoes. This is important, because you need to leave the skin on. Try to wash them well before you boil them.
