Turkey Nachos Supreme

This is a fast and easy way to prepare those classic nachos supreme but with some browned turkey meat. Serve with sour cream, salsa or guacamole. Here are the ingredients for this recipe:

  • 1 tbsp of vegetable oil
  • 2 packages of corn tortillas
  • ½ green bell pepper, with the seeds removed
  • 8 ounces of lean, ground turkey, cut into pieces
  • ½ cup of jarred salsa
  • 1 can of tomato sauce
  • 4 scallions, trimmed and sliced thinly
  • 1 package of taco seasoning mix
  • 2 tomatoes
  • ½ cup of cilantro leaves
  • ½ cup of shredded Monterey Jack cheese
  • 1 can of black beans
  • lime wedges

Turkey Nachos Supreme

Firstly, heat up your oven to 425 degrees F. Take two baking sheets and spread your tortilla wedges onto them. Bake the tortillas in the oven for 5 minutes then flip them over. Spray them with some nonstick cooking spray then put them back in the oven for 5 more minutes.

Secondly, heat some oil in a skillet over medium heat. Add in the peppers and turkey, cooking them together for 2 minutes. At this point the turkey should no longer be pink. Now stir in the tomato sauce and about 1/3 cup of water. Pour your taco mix into the water, but make sure to keep at least one tablespoon of it. Cook for 3 minutes, stirring from time to time.

Line the bottom of a baking dish with tortilla chips, then spoon the turkey mixture, salsa and beans over them. On top of everything put the scallions then shred the Monterey Jack. Bake at 350 degrees for 15 minutes until the cheese is melted.

Lastly, in order to really get those nachos supreme, scatter some tomatoes and cilantro leaves on top of the tortillas, along with a squeeze of lime.
