Traditional Irish Soda Bread

This traditional Irish soda bread is made with oats and seeds and it’s great whether it’s served at room temperature , with butter, spread or smoked salmon. You can even eat it as an accompaniment for a steaming bowl of clam chowder. The variety of seeds used to make this bread give it enough nutrients to lasts you throughout the whole day.irish soda bread

  • ¾ cup of whole milk
  • ½ cup of sorghum flour
  • 1 tbsp of white vinegar
  • 1 egg
  • ½ cup of potato starch
  • 2 tbsp of brown sugar
  • 1 tsp of baking soda
  • ¼ cup of unsalted butter
  • 3 tbsp of oat bran
  • 1/3 shelled sunflower seeds
  • 1 tsp of poppy seeds

Traditional Irish Soda Bread

First of all, heat up the oven to 375 degrees F, then grease a pan and flour it lightly. Set it aside for later. Into a glass measuring cup, combine the vinegar along with the milk. Let the stand until thickened, for about 5 minutes. Add in the egg and then whisk everything with a fork.

Secondly, use a food processor and combine the oat and sorghum flour, potato starch, baking powder, baking soda and salt. Process them until they are blended. Add in the butter and then pulse until the mixture is smooth. Add in the oat bran and then pulse one last time. Transfer everything to a bowl and then stir in the sunflower seeds. Add the liquid ingredients too and mix them well to incorporate them.

Next, scrape the batter into the pan. Using a serrated knife, make a cross on top of the loaf, extending it to the edges. Sprinkle chia seeds on top. Bake for about 50 minutes, until the loaf is slightly browned. Let it cool off for 5 minutes and then serve it at room temperature.
