Seafood Paella

This impressive seafood paella made with king prawns and mussels is perfect for feeding a crowd at a dinner party. Paella is a classic dish originated in Spain, and it is cooked with shellfish, rice and seasoned with parsley. It is perfect for easy entertaining. Here is the step by step on how you can make it:

  • 2 tbsp of olive oil
  • 24 shell-on king prawns
  • 500g of monkfish
  • 1 onion
  • 4 garlic cloves
  • 2 tsp of smoked paprika
  • 500g of mussels
  • 100g of frozen peas
  • a handful of parsley

For the stock

  • 1 tbsp of olive oil
  • 6 garlic cloves
  • 1 chicken stock cube
  • 1 star anise

Seafood Paella

First of all, peel the de-vein the prawns, but do not discard the shells and heads. Return the prawns into the fridge. To make the stock, heat the oil inside of a large pan over medium-high heat. Add in the tomatoes, garlic, onion and prawn shells and heads. Cook for 3-4 minutes and then add two liters of water, the stock cube and star anise. Let it simmer for 30 minutes and then mash it using a food processor.

Secondly, heat up the oil into a large pan then brown the monkfish for a few minutes on each side. Remove from the pan then fry the onion for 5 minutes. Stir in the rice and cook for 30 seconds. Add paprika, cayenne and garlic. Stir in 1.5 liters of the fish stock, then bring to a boil. Return the monkfish to the pan with the mussles, prawn and peas.

Lastly, cover the pan with a large baking tray and cook on low heat for another 15 minutes until the mussels open. Scatter parsley over the dish before serving. Paella is a dish that is best when served warm.
