Rocky Road Cake Balls

Marshmallows, chocolate and nuts. This is the combination for a perfect treat. This recipe for rocky road cake balls starts with a base for fudgy brownies. We will also use marshmallows in three different ways during the recipe: in the batter, after baking and as decoration. Your sweet tooth will definitely be satisfied.

Rocky Road cake balls

  • 1 cup of sugar
  • ½ stick of butter
  • ¾ cocoa powder
  • 1 tsp of vanilla extract
  • ¼ tsp of salt
  • 2 eggs
  • 1 cup of miniature marshmallows
  • ½ cup of chopped walnuts
  • ½ cup of all-purpose flour

Assembly:

  • 1 cup of miniature marshmallows
  • ¼ cup of chopped nuts
  • 23 miniature fluted paper cups
  • 1 pound of semisweet chocolate

Rocky Road Cake Balls

First of all, preheat your oven to a temperature of 350 degrees F, then coat the inside of a square pan with nonstick cooking spray. Melt the butter into a saucepan over the stove or place it into the microwave. Whisk together the vanilla, salt and cocoa until they are combined. Whisk in the eggs, one at a time, then add the flour, nuts and marshmallows. Scrape the batter into the pan once you are done.

Secondly, bake for 15 minutes, or until a toothpick that you insert in the center comes out clean. Do not overbake it. Cool the pan completely, after which the brownies will be ready to use. Now crumble the brownies and then combine them with one cup of extra marshmallows. Use you hands in order to get the best results. Roll into ping pong sized balls. Refrigerate for a while until you melt the chocolate.

Line the baking sheet with some parchment paper then set it aside. Chop the rest of the marshmallows, combining with the chopped nuts. Melt the chocolate into the microwave, then dip each ball into it. Place the balls onto the parchment-lined pan, then sprinkle with marshmallows.

Lastly, refrigerate for a couple of hours until the chocolate is set. Then, your rocky road cake balls are ready to serve.
