Pulled Chicken Sandwich

Your guests will definitely be impressed if you present them with this deceptively easy pulled chicken sandwich. You can use store-bought rotisserie chicken to shorten cooking time or if you do not want to use chicken breasts. Either way, this dish is a winner every time.

  • Salt and pepper
  • 4 boneless chicken breasts
  • 4 cloves of garlic
  • 1 onion, finely chopped
  • 1 cup of barbecue sauce
  • ½ cup of apple cider vinegar
  • hot pepper sauce
  • 6 French rolls
  • 6 ounces of shredded Monterey Jack cheese

Pulled Chicken Sandwich

First of all, you need to begin cooking the chicken, and for this we will use a slow cooker. Pour water inside of the slow cooker and then season the chicken with salt and pepper. Drop the cloves of garlic inside the slow cooker too. Cover the slow cooker with the lid and then cook until the meat is tender. This should take around 4 to 5 hours on low or 2 to 3 on high. During the last hour of cooking, pour the barbecue sauce over the meat too.

Secondly, simmer the hot pepper sauce, skimming occasionally, for about 15 minutes. In the meantime, take out the chicken from the slow cooker and place it onto a cooking board. With the help of two forks, pull the meat apart.

Add the shredded chicken into the simmering sauce and cook for a couple of minutes. Add the shredded Monterey Jack cheese into the sauce and cook for once more minutes, until it melts.

Lastly, take each French roll and then cut it into half. Spoon the chicken bits onto a half of the bun and then top with another half. Now your pulled chicken sandwich is ready serve.

Note: You can also opt to boil the chicken inside of a pan in order to shorten the cooking time or if you do not have a slow cooker.
