Mashed Potatoes with Tuna and Tomato Sauce

The creamy tomato sauce provides a great addition to the fluffy mashed potatoes and your tuna fish. Also, if you’ve never cooked with grape tomatoes before, now is the ideal time. Here is what you need for this recipe:

  • 2 tbsp of unsalted butter
  • 1 and ½ pounds of golden potatoes, peeled and quartered
  • 1/4 cup of olive oil
  • 1 tsp of salt
  • 2 cups of grape tomatoes
  • 1/8 teaspoon black pepper
  • 1 can of tomato sauce
  • 3 cloves of garlic
  • ½ tbsp of dried oregano
  • ½ tbsp of red pepper flakes
  • 4 tuna steaks
  • Lemon wedges, for decorating

Mashed Potatoes with Tuna and Tomato Sauce

First of all, take a medium saucepan and place the potatoes inside. Cover them with cold water and add a pinch of salt. Bring them to a boil, then reduce the heat and let your potatoes simmer for 15 minutes. When they become soft and tender, drain all of the water. Add butter and start whipping them with an electric mixer while gradually adding in drizzles of olive oil. Season them with ½ of your salt and pepper.

Secondly, you need to make your tomato sauce. For this, combine your can of tomato sauce with the sliced grape tomatoes, garlic, oregano and red pepper flakes. Mix all of the ingredients together and then place them into the microwave for 5 minutes.

Take your tuna, then spoon out the microwaved sauce on top of it. Cover the fish with some microwave-safe plastic wrap, making a vent in one corner. Put it in the microwave for 4 minutes on high heat. Remove from the microwave, flip onto the other side then put it back in for 4 more minutes. Serve your tuna with a side of mashed potatoes and the tomato sauce scooped over it.
