Mango Pulled Pork

Smoky, spicy and sweet. This is the perfect combination for the pulled pork that you are trying to cook. It is also delicious when served as a sandwich filling. Here is how you can make it, along with variations of the recipe:

  • 1 tsp of salt
  • ½ tsp of pepper
  • 3 pounds of boneless pork shoulder
  • 1 tbsp of vegetable oil
  • ¼ cup of tomato paste
  • ¼ cup of brown sugar
  • 2 cups of chicken broth
  • 2 onions
  • 3 cloves of garlic
  • 2 chipotles
  • 2 mangoes
  • ¼ cup of chopped cilantro
  • cooked corn grits

Mango Pulled Pork

First of all, season your pork with ½ a teaspoon of salt and ¼ a teaspoon of pepper. In a large skillet, put in the pork shoulder and let it cook over medium heat. Make sure to brown all sides of the pork properly, for about 8 minutes. Once you are done, set it aside for the moment.

Inside a slow cooker, stir in the brown sugar, tomato sauce, the remaining teaspoons of salt and pepper as well as the chicken broth. Add in the chipotles, onions and garlic too. Place the pork shoulder on top, cover and cook everything on high for 6 hours. During the last 30 minutes, add in the mango, chopped into cubes as well as the cilantro. When you serve this dish, add in the corn grits.

Variation

Firstly, if you want a variation of this recipe, omit the onion, cilantro and the chipotles. Instead, combine ¼ cup of hoisin sauce, 1 tablespoon of honey, 1 tablespoon of sesame oil and a pinch of ginger powder. Pour this mixture over the pork inside the slow cooker. You can add the meat into noodle soup, adding some of the cooking liquid form the pork along with a poached egg.
