Lemon Orecchiette Pasta

The name of the orecchiette pasta comes from its distinct shape that give it the appearance of an ear. Cooked with goat cheese, lemon and chicken bits you have the perfect comfort food. Here is how you can make it:

  • 3 cloves of garlic, minced
  • 1 and ½ cups of orecchiette pasta
  • 1 large chicken breast, cut into cubes
  • juice from one lemon
  • 2/3 cup of milk
  • 1/3 cup of chicken broth
  • ½ cup of olive oil
  • 1 tbsp of flour
  • 1 tbsp of ground Parmesan cheese
  • 2 tbsp of rosemary, chopped
  • ½ tsp of salt
  • 1 tbsp of goat cheese

Lemon Orecchiette Pasta

First of all, begin by heating up the olive oil and minced garlic into a large skillet over medium heat. Pour in the chicken breast pieces along with the lemon juice. Allow everything to simmer, giving it a stir from time to time, until the chicken finishes cooking all the way. You can check by cutting one of the cubes and checking the inside to see. Once you are satisfied, remove the meat from the pan with the aid of a slotted spoon.

Secondly, lower the heat then add in the milk, chicken broth, grated lemon zest, salt and one teaspoon of rosemary. Once the mixture heats up, sprinkle the flour over the mixture and whisk it in. Make sure that the ingredients in the pan do not reach the boiling point when you put in the flour. Whisk and lower the heat, letting the sauce simmer.

Now you can move on to prepare the orecchiette pasta, following the directions from the package. You should add ½ a teaspoon of salt and olive oil to the water that you boil the pasta in. While it boils, add the chicken and goat cheese into the lemon sauce and stir until the cheese melts. Remove the pan from the heat and set aside. Strain the pasta and pour it over the sauce, stirring to incorporate everything.
