Hummingbird Oatmeal Cookies

When you want a simple yet substantial treat, these oatmeal cookies are the solution. Containing banana, pineapple and coconut, they bring an exotic flavor into your kitchen. Here are the ingredients that you need to make them:

  • 1 cup of brown sugar
  • 1 tsp of vanilla extract
  • 2 tsp of cinnamon
  • 1 cup of butter
  • 2 eggs
  • ½ tsp of kosher salt
  • 1 tsp of baking soda
  • 2 cups of all-purpose flour
  • ½ of a banana
  • 1 cup of regular uncooked oats
  • 1 cup of chopped pecans
  • ½ cup of dried pineapple bits

Cream Cheese Frosting:

  • 1 cup of chopped banana chips
  • ½ cup of sweetened flaked coconut
  • ½ a cup of toasted chopped pecans

Hummingbird Oatmeal Cookies

First of all, heat up your oven to a temperature of 350 degrees F. In a medium-size bowl, beat together the brown sugar, butter and vanilla with an electric mixer. Add in the eggs, one at a time, mixing well so they get incorporated properly.

In another bowl, combine the dry ingredients, meaning the salt, baking soda, flour and cinnamon. Mash your banana and add it in the flour mixture, mixing well to incorporate it. Now, gradually add this composition over the butter, beating it well. In addition to this, pour in the oats, chopped pecans and dried pineapple bits too. Stir everything together a couple of times.

Secondly, using a scoop, take out bits of the dough and place them two inches apart on the parchment lined baking sheets. Flatted each bit of dough using either your palm or the back of a spoon. Bake your oatmeal cookies in the oven for 12 minutes, then let them cool off onto a baking sheet.

You can also opt to make a frosting for your cookies if you want them to be sweeter. Beat together 2 cups of powdered sugar, 4 oz. of cream cheese and a teaspoon of vanilla extract with an electric mixer. Add in ¼ cup of heavy cream and beat everything until it becomes smooth.

Lastly, spread your frosting over each cookie, then sprinkle them with banana chips and toasted pecans.
