Gluten Free Chocolate Chip Cookies

Everyone loves trying out different types of chocolate chip cookies. Today’s recipe of Gluten Free Chocolate Chip Cookies has a blend of almond and coconut flour, making it suitable for people on a gluten-free diet.

  • ¼ cup of coconut sugar
  • 1 tbsp of honey or maple syrup
  • ¼ cup of unsalted butter
  • 1 large egg
  • 1 tbsp of honey
  • 2 tbsp of vanilla extract
  • 1 cup of blanched almond flour
  • ½ cup of chocolate chips
  • 2 tbsp of coconut flour
  • ¼ tsp of baking soda
  • ¼ tsp of salt

First of all, begin by adding the butter, egg, sugar and vanilla extract into a bowl and mix them until they blend together. A simple handheld mixer will do just right. Keep in mind that this mixture will not become creamy. Whisk the coconut and almond flour, salt and baking soda together into a separate bowl, then incorporate it into the wet batter. Mix well to incorporate both mixtures, and at the end you can also add your chocolate chips.

Secondly, take the dough out of the bowl, cover it with some plastic wrap and let it chill for about two hours. You need to do this so your cookies are sliceable. Wrap and roll the plastic wrap around the dough, twisting the ends to push the dough closer together.

In the meantime you can preheat the oven at 350 degrees F. Unroll the dough and then spread it out using a rolling pin. Now you can begin cutting out the cookies, then placing them onto the baking sheet lined with parchment paper. Spread them out and keep ½ inch between them, so they won’t stick together while baking.

Lastly, bake for 15 minutes and then your gluten free chocolate chip cookies are ready to eat!
