Fig and Blue Cheese Tart

This special fig tart is made with a crumbly walnut pastry and it can make for an amazing vegetarian dinner. Here is how you can make it at home as well as what you need for it:fig tart

  • 175g of butter
  • 100g of wholemeal flour
  • 100g of walnuts
  • 3 eggs
  • 400g of shallots
  • 1 tsp of fresh thyme
  • 200ml of crème fraiche
  • 200ml of double cream
  • 140g of blue cheese
  • 3-4 fig

Fig and Blue Cheese Tart

First of all, put the flour into a food processor, along with ½ teaspoon of salt and the diced butter. Mix until you can’t see any lumps, then you can add the walnuts. Mix the egg yolks with 3 tablespoons of cold water, then add them into the machine, pulsing again. Place the pastry onto a floured surface, then knead it to make a ball. Cover it and let it chill for one hour.

Secondly, to make the filling, melt the rest of the butter into a pan, then add the shallots and cook them for 15 minutes. Add the thyme at the end, then remove from the heat. Beat the eggs along with the cream and the crème fraiche. Crumble in the cheese and season with pepper.

Next, heat up your oven at 200 degrees C. Bake the pastry for 40 minutes, until it becomes golden brown and crisp. Pour the cooled onion mixture over the cream mixture, and then over into the pie crust. Place the fig halves on top, with the cut side up, then sprinkle with thyme. Bake for about one hour, until the tart is brown and lightly wobbly.

Lastly, let the fig tart cool for about 20 minutes before you try removing it from the tin. You can serve it with a green salad on the side.
