Diabetic Friendly Chili Recipe

We all know how delicious chili can be. However, it can also be quite unhealthy and lots of people cannot eat it. Because we also want them to enjoy it, we came up with a diabetic friendly chili recipe. You can make it with basic ingredients from your pantry and it has only a few calories too. Bonus: it’s gluten free! Here is what you will need for it:

  • 2 tbsp of olive oil
  • 1 large bell pepper
  • 2 carrots
  • 4 cloves of garlic
  • 1 medium red onion
  • 1 can of diced tomatoesDiabetic friendly chili recipe
  • 2 cups of vegetable broth
  • ½ tsp of salt
  • 1 tsp of smoked paprika
  • 1 tsp of oregano
  • 2 cans of black beans
  • 2 tbsp of fresh cilantro
  • sliced avocado, tortilla chips or sour cream to decorate

Diabetic Friendly Chili Recipe

First of all, take a large Dutch oven or any other type of large pot. Place it over medium heat with olive oil and let it simmer. The, you can add in the chopped bell pepper, onion and carrots. Sprinkle a dash of salt and give them a stir. Continue cooking them until the onion becomes tender and translucent. Once it does, you can add in the chili powder, oregano and garlic. Cook everything until it becomes fragrant, giving it a stir from time to time.

Secondly, add in the black beans, diced tomatoes and the vegetable broth. Stir to combine everything and let the mixture simmer. Cook it like that for half an hour. Reduce the heat if necessary. Keep an eye on it and give it a stir from time to time.

Pro tip: Take one cup of the chili from the pan and throw it in the blender. Blend it until it becomes smooth. Once done, pour it back over the mixture in the pan. This will give it a better texture and flavor.

Now is the time to also add the cilantro. Stir to incorporate everything and let it simmer for another few minutes. Lastly, divide the chili between bowls and garnish with your preferred topping.
