Crispy Duck Recipe

Cooking a whole roasted duck should not be a fussy affair. With only a few hour’s worth of roasting and barely any work, you can have the dish ready. Here is a crispy duck recipe which is delicious and easy to make.

  • 2 ducks
  • 140g of caster sugar
  • 6 star anise seeds
  • a small bunch of spring onions
  • a large piece of ginger
  • 2 tbsp of malt syrup
  • 3 tbsp of red wine vinegar

Crispy Duck Recipe

First of all, soak 4 wooden skewers in water for about 20 minutes. Take the ducks and wash them inside and out with cold water. Drain them and pat them dry with paper towels. Into a bowl, mix together the ginger, star anise, sugar, spring onions and a pinch of salt. Use this to fill the cavities. Using the wooden skewers, close the cavities and then set the duck aside.

Secondly, mix the maltose and two tablespoons of vinegar. Add the remaining quantity of vinegar to a jug of boiling water and pour it over the ducks. Due to the boiling water, the pores of the ducks will open and absorb the sweetness of the maltose. Vinegar helps rid of the waxiness and give the duck skin a glossy appearance. Smear the maltose over the ducks and place them into a plastic container. Leave it in the fridge overnight.

Next, heat up the oven to 220 degrees C. Pour some water into the bottom of a large roasting tin, then place the ducks inside and cover with foil. Cook for 45 minutes, then take off the foil and roast for 45 more minutes. The meat should be well-done, because there is no such thing as rare roast duck.

Lastly, take the duck out of the oven and let it rest for 20 minutes before you begin to carve it.
