You need a whole roasting chicken, 1 tablespoon of fresh lemon rind, 2 garlic cloves, 1 teaspoon of butter and 2 teaspoons of black peppercorns. Begin preheating the oven to 375°F/190°C. Crush the pepper and combine it with rest of the ingredients. Rub this mixture to the chicken and under its skin. Place the chicken to a rack with the breast side up. Then you have to bake the chicken for 40 minutes at 375°, after this, increase the oven temperature to 450°F/230°C and bake for another 20 minutes. Before eating let the chicken stands for 15 minutes.
