Colorful Spring Cupcakes

Leave behind the cold winter days and bring joy into your life with these delicious spring cupcakes. Their warm colors are enough to brighten up any day. Here is what you need to make them:

  • 2 tbsp of canola oil
  • 1/3 cup of cocoa powder
  • 1 tbsp of baking powder
  • 3 and ½ cups of all-purpose flour
  • 4 eggsSpring Cupcakes
  • ½ tsp of salt
  • 3 sticks of unsalted butter
  • 1 cup of granulated sugar
  • 1 and ½ cups of milk
  • 2 tsp of vanilla extract

Frosting:

  • 6 cups of confectioners’ sugar
  • 3 sticks of butter
  • ½ cup of milk
  • ½ tsp of vanilla extract
  • assorted pastel food coloring

Colorful Spring Cupcakes

First of all, take a small bowl then blend in the oil and cocoa powder until they become smooth then set them aside. Heat up your oven to a temperature of 350 degrees F. Now, you will need two standard-size muffin pans into which you will place liners. Make sure you have enough for 24 cupcakes.

Secondly, take another bowl and mix in your dry ingredients, meaning baking powder, salt and flour. Grab an electric mixer and use it to beat together the butter and sugar into a bowl. Add the eggs, one at a time, beating them together well. Add in your flour mixture, alternating with milk then pour in the vanilla extract too.

Moreover, you can choose to divide the batter into two. In one half of it you can add the cocoa mixture so you have both chocolate and vanilla cupcakes. Lastly, spoon out your mixture into the cupcake shapes, filling them up to 1/3. Bake them for 25 minutes then let them cool afterwards.

Frosting:

Beat together the butter, milk, sugar and vanilla on low speed with your mixer. Divide the mixture into bowls and tint with the colors you desire. Use it to decorate and now you have 24 colored spring cupcakes!
