Coffee Cupcakes

What could be better than a cup of coffee? Cupcakes to go along with it! However, if it’s coffee cupcakes then it’s even better. Therefore, today we will be making coffee cupcakes. Here is how:

  • ¾ cup of unsalted butter
  • ¼ tsp of cinnamon
  • 1 and ¾ cups of all-purpose flour
  • 1 tsp of baking powder
  • a pinch of salt
  • ¾ cup of sugar
  • 2 eggs
  • 1 and ½ tsp of instant coffee
  • ½ cup of brewed coffee
  • 1 tsp of vanilla extract
  • white frosting

Coffee Cupcakes

First of all, begin by heating your oven to a temperature of 350 degrees F. Then, take you standard-size muffin pan and line it with 12 cupcake liners and set it aside. Now, take a bowl and into it whisk together your dry ingredients. This means cinnamon, salt, flour and baking powder.

Secondly, take another bowl and beat your butter along with the sugar for 2 minutes. Add your eggs, one a time time, making sure to beat the mixture well after each one is added. Now, put in the flour mixture then slowly pour the brewed coffee in too. After you are done, take the mixture and pour it into each of the cupcake lined pan. Fill them up only to 1/3.

Once you are done with that, let your cupcakes bake for 25 minutes. Once they are done, remove them from the pan and let them cool completely. While they do that, you can begin preparing your frosting.

Inside a small bowl, combine the vanilla extract with instant coffee and one teaspoon of water. Stir until the instant coffee dissolved. Now add your frosting and mix it in until it has an even color. Spread it over the cool cupcakes with your knife. You can now serve your coffee cupcakes!
