Starbucks recently announced that stores across the US would offer coconut milk as a vegan option for their drinks. However, while this is amazing, not all of us are fans of the franchise. While they do have vegan options, there is still the problem of calories and additives. Luckily for you, you don’t have to depend on them to get your fix. Here are 3 amazing coconut milk drink recipes you can make at home.
Delicious Vegan Baileys. This is not a drink only for Christmas Day or Saint Patrick’s. This non-dairy version of the boozy treat is perfect anytime.
1 tablespoon of cocoa
2 shots of espresso
1 can of coconut milk
½ cup of coconut creamer
1 teaspoon of almond extract
1 tablespoon of vanilla
3/4 – 1 cup of whiskey
INSTRUCTIONS: Combine the cocoa with hot espresso and stir until it dissolves. Add this along with the other ingredients into a blender. Blend it on high.
Turmeric Tea. This is a slightly spicy, coconut-based milk tea that can cure whatever ails you. Insomnia, a cold, the blues, that “even my bones are cold” feeling, you name it.
2 cups of coconut milk
½ tsp of ground turmeric
1 cinnamon stick
6 peppercorns
1 star anise
A pinch of cayenne pepper
Honey to taste

All you need to do for this one is to blanch some almonds, and soak some rice in water overnight. Blend your rice with the almonds into water or milk. Add sugar and then strain everything through a cloth.
