Clear Chicken Soup With Angel Hair

Pour the hot soup onto angel hair pasta before serving it to your family. The clear soup allows all of the colorful vegetables to be seen, making this a delicious and enjoyable dish. Here are the ingredients you need for it:

  • 2 pieces of boned chicken breast
  • ½ onion
  • ¼ tsp of salt
  • 1 chicken, cut into 8 pieces
  • 5 medium carrots
  • 2 parsnips
  • 2 turnips
  • 5 beef marrow bones
  • 1 green bell pepper, halved
  • 1 onion
  • 3 tbsp of kosher salt
  • 20 parsley sprigs
  • ½ head of a cauliflower
  • 1 zucchini
  • 7 cloves of garlic
  • 1 daikon radish
  • 1 pound of Passover noodles
  • 4 whole allspice

Clear Chicken Soup With Angel Hair

First of all, take a large stockpot and put in: turnips, green pepper, onion, marrow bones, parsley, chicken, carrots and 1 tablespoon of salt in it. Cover everything with 6 quarts of cold water and bring it to a boil. If foam starts forming at the top once it starts boiling, skim and discard it. Afterwards, add in the cauliflower, garlic, the remaining salt and allspice and return to a boil. Let it simmer for one hour at low heat.

Now, you can remove the chicken breast and let it cool down. Shred it and store it into the fridge for another use. Return the bones from the chicken breast into the pot and let them simmer for one more hour, at least.

Secondly, strain the contents of the pot with a cheesecloth or an old T-shirt. Keep only the liquid, then pour it into a pot. Add zucchini, daikon radish and the chicken bits if you so want. Keep the soup at low heat, otherwise it can become cloudy.

Lastly, place the Passover noodles into the soup bowl and put the hot soup over them. This will give them that clear, angel hair-like look. Serve immediately after pouring into bowls. You can even freeze this soup and use it for later, and the same can be done with the chicken breast too.
