- 2 tsp of baking powder
- 3 cups of all-purpose flour
- 1 egg
- 1 cup of salted butter
- 2 tbsp of pure vanilla extract
- 1 cup of granulated sugar
- 1 batch of confectioners’ sugar frosting
First of all, take a medium sized bowl and pour in the baking powder and flour, whisking them together. Once you are done, set the bowl aside for now. In another separate bowl beat together the butter and sugar using an electric mixer set on medium speed. Continue mixing for about 2 minutes, until the mixture is smooth, and then beat in the egg and vanilla extract.
Scrape the sides of the bowl with a spatula and the turn the mixer to low. Now, add in the flour mixture a little at a time, scraping it from the sides of the bowl when necessary. Once you incorporate everything, your batter should be soft and non-sticky. Take it out of the bowl and wrap it in some plastic wrap, pressing down on it to form a disk. Store it in the fridge for about 10 minutes before you begin rolling it.
