Chocolate Oatmeal Treats

The combination of oatmeal, chocolate and brown sugar will surely draw everyone in. Make sure not to overbake these bookies because they’re best with a chewy texture to them. The topping of these chocolate oatmeal cookies makes things a bit messy, but no one will complain. Without further ado, here is how you make these cookies.

  • 2 ¼ cup old-fashioned oats (not quick or instant)
  • 1 cup of all-purpose flour
  • ¾ tsp of baking powder
  • 1 cup of brown sugar
  • 2 cups of oats
  • ½ tsp of baking soda
  • ½ tsp of cinnamon
  • 2 eggs
  • ½ tsp of salt
  • 1 tsp of vanilla extract
  • ¾ cup of unsalted butter
  • 1 cup of semisweet chocolate cut into chunks
  • 1 cup of chopped pecans

Filling:

  • 2 jars of marshmallow crème

Topping:

  • ½ cup of semisweet chocolate, chopped
  • ½ cup of heavy cream
  • 1 tbsp of honey

Chocolate Oatmeal Treats

First of all, preheat your oven up to 350 degrees F, then line 3 baking sheets with parchment paper, setting them aside afterwards. In a bowl, whisk together the flour, oats, baking powder, baking soda, salt and cinnamon. Set aside. In another bowl, beat the sugar and butter using an electric mixer. Add in the eggs and vanilla. Incorporate the flour mixture a little at a time, mixing until it’s incorporated. Fold in the chopped nuts and chocolate bits at the end.

Secondly, take around 2 tablespoons of dough and place them onto the lined pans. With slightly damp fingers, press down onto the dough to ½ inch thickness. Bake for 15 minutes, then let them cool. For the filling, simply spread the marshmallow over a half of the cookies, topping with another cookies.

Lastly, for the chocolate topping, melt the chocolate, then add in the cream and honey, bringing them to a boil. Drizzle it over the cookies while it’s still hot, then serve.
