Chocolate Chip Rocher Cookies

Chocolate Chip Rocher Cookies

These cookies are not too sweet and they also have a chewy texture. Moreover, they are easy and fun to make, taking about half an hour of assembly and baking. Here is how you can make these rocher cookies yourself:

  • 4 egg whites
  • 1 and ¼ cups of sugar
  • ½ cup of corn syrup
  • 14 ounces of fine shredded coconut
  • 14 ounces of dark chocolate chips
  • 2 tbsp of canola oil

Chocolate Chip Rocher Cookies

First of all, heat the oven up at 375 degrees F. Take two pans and line them with parchment paper and then set them aside. Now, take a pot and fill it with water and bring it to a boiling point. Over it, place a heat-resistant bowl and combine the egg whites, sugar and corn syrup. Stir everything until it reaches a temperature of 120 degrees. Once all of the ingredients got incorporated, remove it from the heat and add the coconut. Allow it to cool down then add one cup of the chocolate chips too.

Secondly, take a scoop or a spoon and scoop out the batter, rolling it between your palms. Make little chestnut-sized balls, then place them onto the baking sheets. Make sure they are about 1 inch apart so they won’t stick together during baking. Bake your cookies for 3 minutes, then rotate the pan to 180 degrees and bake them some more for the same amount of time. Remove your cookies from the pan and let them cool off.

Lastly, we will move on to make the glaze. In a bowl, combine the remaining chocolate chips and oil, and set them over a boiling pot of water. Stir them until the chocolate melts, then set it aside. Take each cookie and dip it into the chocolate until it’s covered halfway. Let your cookies chill in the refrigerator so the chocolate sets, then you can serve them.
