These tender pieces of chicken breast are stir-fried along with sweet cashew nuts to make a classic Chinese dish. The cashew chicken is a simple and delicious meal that you can make at home any time. Moreover, cooking take-out dishes at home means that you can control the quality of the ingredients, and make the dish healthier. Here is how you can make this dish yourself:

  • 1 egg white
  • 450g of boneless chicken
  • 1 tsp of sesame oil
  • 2 tsp of cornflour
  • 300ml of groundnut oil
  • 1 tbsp of Shaoxing rice
  • 100g cashew nuts
  • 1 tbsp of light soy sauce
  • 1 shredded spring onion

Cashew Chicken

First of all, put the chicken into a bowl along with the egg white, cornflour, sesame oil and one teaspoon of salt. Mix well then let it chill for 20 minutes.

Secondly, into a large pan over medium-high heat, pour the oil and heat it up. When it’s very hot, remove the pan from the heat and then immediately add the chicken. Stir vigorously to stop it from sticking to the pan. After about two minutes, after the chicken turns white, drain it of all the oil, then discard the oil. If you are using water instead of oil, it will take longer to boil.

Next, wipe your pan clean then heat it up until it’s hot, then add the groundnut oil. Add the cashew nuts and then stir-fry for one minute. Add the rice and soy sauce. Return the chicken into the pan and stir-fry it too for 3 more minutes.

Lastly, scatter the chopped spring onions on top and serve while still hot. Forget about take-out and decide to cook this delicious cashew chicken yourself. With a flavorful and sweet sauce and tender meat, there is nothing not to like about this recipe.
