Blueberry Orange Muffins

Here is yet another great recipe, this time for blueberry and orange muffins! They are quick and easy to do, and their versatile nature even allow you to add chocolate chips or frosting if you so desire. Here are the ingredients as well as how to make them:

  • ¾ cup of sugar + 5 additional tbsp
  • 2 cups of all-purpose flour
  • 2 cups of all-purpose flour
  • ¾ tsp of baking powder
  • ½ tsp of baking soda
  • 2 eggs
  • ½ cup of milk
  • ½ cup of vegetable oil
  • 1 tsp of orange zest
  • ½ tsp of salt
  • 1 cup of blueberries

Blueberry Orange Muffins

First of all, begin by heating up the oven to a temperature of 375 degrees F. Take a standard-size muffin pan and the coat it thoroughly with nonstick cooking spray. In a large bowl, whisk together: salt, baking soda, baking powder, ¾ of the sugar and flour. Mix all of the dry ingredients together on medium speed with a mixer until everything is incorporated properly. When you are done, make a well in the center of the mixture.

Secondly, take a small bowl and whisk together the oil, orange zest, milk and eggs. Mix them with your mixer on medium heat until everything is incorporated. Once you are done, pour this liquid mixture over the dry ingredients in your other bowl. Do not pour everything all at once. Pour gradually and stir to incorporate and then you can fold in the blueberries.

Spoon out your batter and pour it into the prepared muffin pan, filling each cup to about ¾. You can leave to of the muffin cups empty, to fill them with water later. This will help to make your muffins bake evenly.

Lastly, sprinkle each muffin with sugar so they will have a nice, glowing crisp. Bake them at 375 degrees for 25 minutes, then your blueberry orange muffins are ready to serve.
