Beans and Beef Chili Recipe
Firstly, heat up ½ a tablespoon of vegetable oil in a large pot over medium-high heat. Take the beef and pat it dry. Season it with salt and pepper, making sure to coat it thoroughly. Cook it in batches for about 4 minutes until it browns, adding more oil as needed. Once you are done, transfer it onto a plate and let it sit.
Secondly, reduce the heat to medium and add 1 tablespoon of oil into the pot. Add in the garlic and onions and then cook them for about 6 minutes, stirring until they turn golden brown. Pour the oregano, 1/3 of the chili powder and the tomato paste. Cook for one more minute, stirring all the while. Put the meat back into the pot and stir it with the tomatoes with their juices, pinto beans and the coffee. Bring to a boil and then reduce the heat and let it simmer until the beef is tender. This should take around 2 hours.
Lastly, divide everything into bowls and top with shredded Cheddar cheese, sour cream and/or avocado. For a hot chili, add in another hit of chili powder just as the mixture is done cooking, for a dose of extra heat. If you want the beef chili recipe to be even hotter, add in 5 diced arbol chiles to the pot along with the tomato sauce, omitting the beans.
