Baked Flounder With Crab Meat Stuffing

This baked flounder recipe is really flavorful and really easy to do, ready to land on your dinner table. Here is what ingredients you will need for it:

  • ½ small red pepper
  • ½ onion
  • ¼ tsp of salt
  • 2/3 of Old Bay seasoning
  • 2/3 cup of light cream
  • 3 tsp of chopped parsley
  • 8 ounces of crab meat
  • cooked brown rice
  • ¾ cup of white wine

Baked Flounder With Crab Meat Stuffing

First of all, take a large skillet and place it over medium heat. Coat the skillet generously with nonstick cooking spray and then add the red peppers and onion. Cook them for 4 minutes until they soften, stirring from time to time so they cook thoroughly. Stir in ½ teaspoon of the Old Bay, a pinch of salt and the light cream. Bring your mixture to a boil and cook for one more minute until the sauce thickens. Afterwards, add in the crab meat and two teaspoons of parsley.

Secondly, heat your oven to 400 degrees F. Take a baking dish and coat it with nonstick cooking spray, then set it aside. Place your flounder onto a work surface then spoon out the crab mixture onto one end. Roll up from one side to another, creating a little bundle. Transfer everything onto the pan, seam side down. Sprinkle with the remaining Old Bay and parsley and add the wine into the pan.

Lastly, bake at 400 degrees for 20 minutes until the fish becomes tender and white. Remove the baked flounder from the pan with a spatula. Spoon out some of the wine mixture from the pan and drizzle it onto the plate. You can serve the flounder alongside rice or quinoa, if you desire. It makes for a filling meal, fit for people on a diet, too.
