Rich and creamy, this baba ganoush recipe concentrates a rich flavor from all of the ingredients. Baba Ganoush is a Levantine dish that is very easy to make at home.

  • ¼ cup of tahini
  • 1 large eggplant
  • 3 garlic cloves, minced
  • 1 pinch ground cumin
  • ¼ cup of fresh lemon juice
  • salt, to taste
  • 2 tbsp of extra virgin olive oil
  • 1 tbsp of chopped parsley
  • ¼ cup of black olives

Baba Ganoush Recipe

Firstly, begin by preparing a medium-hot fire inside a charcoal grill. Once you are done, preheat your oven at a temperature of 375 degrees F. Take your eggplant and prick its surface with a fork in several places. This will allow it to cook thoroughly once you place it on the grill. After you finished pricking your eggplant, place it onto the grill rack 4 to 5 inches from the fire.

Grill your eggplant, turning it from time to time, so that it cooks evenly on all sides. The skin will start blackening and blistering, and the flesh of the eggplant will start feeling soft. Once this happens, transfer your eggplant onto a baking sheet and bake it into the oven for 20 minutes, until it becomes soft.

Secondly, remove the eggplant from the oven and let it cool off slightly. Afterwards, peel of the skin and discard it. Take the eggplant flesh and place it in a bowl. Sing your fork, mash the eggplant into a paste. Add the tahini, garlic, ground cumin and the lemon juice and mix everything well. Season with salt for taste.

Lastly, transfer your mixture into a serving bowl. Make a little well in the middle, drizzle olive oil over the top and sprinkle with parsley and olives. This baba ganoush recipe is easy to do and it’s perfect for when you need a light snack.
